Ingredients:
2 large avocado
2 tsp lightly whipped cream
2 tsp chicken stock
1 lemon (juice)
1 buffalo mozzarella
4 - 6 slices iberico ham or prosciutto
Method:
Preheat oven to 200° and roast the ham slices until crispy, 8 - 10 minutes
Mix avocado meat, cream, stock in a mixer. Add lemon juice, salt and pepper
Pure soup in to glasses and top with burrata and sprinkle the roasted ham over
