Cold Avocado Soup, Burrata Swirl and Crispy Iberico Ham

Serves 2


Ingredients:
  • 2 large avocado

  • 2 tsp lightly whipped cream

  • 2 tsp chicken stock

  • 1 lemon (juice)

  • 1 buffalo mozzarella

  • 4 - 6 slices iberico ham or prosciutto

Method:
  1. Preheat oven to 200° and roast the ham slices until crispy, 8 - 10 minutes

  2. Mix avocado meat, cream, stock in a mixer. Add lemon juice, salt and pepper

  3. Pure soup in to glasses and top with burrata and sprinkle the roasted ham over
