Salad may be the most boring thing for many, but for me it is the absolute best. If you sit at my table, there is always at least one really fantastic salad as an accompaniment. I love all the exciting flavors and textures you can get with the wonderful green.
Think seasonal, think texture, think creamy, healthy, sweet or spicy dressings. The variety is endless. Below I offer three of my absolute favourite dressings/salads. And best of all, both the brain and the body get a wealth of whitish vitamins, minerals and amino acids to enjoy.

Sweet an Sour Pomegranate Vinaigrette
This is absolutely lovely. It got a fresh sweetness mixed with a light sour flavour into it. the color is beautiful and I love to dress up either a winter salad with brussels sprouts, orange, feta cheese and walnuts or just sprinkle over a spinach salad with chicken filets as the protein.
Ingredients:
1 - 2 pomegranates, separate seeds and juice
1 dl extra virgin olive oil
1 tbsp dijon mustard
1 tsp honey
1 tsp red wine vinegar
Method:
Cut the pomegranates in to half and pure the juice and seeds into a bowl. Use a strainer to separate the seed from the juice.
Whisk together juice, mustard, honey and vinegar
Slowly whisk in 1 tbsp at a time of the oil until fully combined and an emulsion forms.
Dress the salad and top with seeds.

Terrific Truffle, Miso and Parmesan dressing
Wow, this is a bomb of flavour. I remember I first had this salad (kind of) at Nobu (a Asian future restaurant chain) in Singapore. And because of this salad I searched for Nobu restaurants wherever I travelled in world after this.
And of course I immediately tried to make my own interpretation of it, which always is a huge success at my dinners.
Try it, serve it and impress every single one you serve this delicious salad.
Ingredients:
400 g spinach salad
1 tbsp truffle oil
1/2 - 1 dl extra virgin olive oil
2 tbsp red miso paste
1 lime, juice
4 tbsp grated parmesan cheese, save some for garnishing
fresh or dried truffle to top the salad
Method:
Mix all the ingredients together. But save the parmesan to the last
Dress the salad and top with truffle and more parmesan

Super Creamy Fresh Potatoes Salad a' la Ceasar Deluxe
Caesar salad is always a winner. It takes five minutes to mix your own caesar dressing and it's actually more creamy and tasty. With this dressing you can variate your salad in so many ways. Above you see one of the top choices for me. It's with fresh potatoes, asparagus and off course the classic roman salad, as it sucks up the dressing absolutely fantastic and don't leave a single drop to waste. Ingredients:
500 g build and cold fresh potatoes
400 g roman salad
200 g green asparagus (boiled for a couple of minutes)
1 1/2 dl olive oil
1 egg yolks
2 tsp dijon mustard
1 garlic clove
1 dl granted parmesan and 1/2 dl for garnish
2 sardine filets in oil
1 lemon, juice
Method:
But the boiled fresh potatoes, cut roman salad and asparagus in a large bowl
Mix yolk, mustard, garlic and sardine fillets with a mixer
Slowly add the oil and mix until creamy texture
Add granted parmesan and gently mix
Season with lemon, salt, pepper
Dress the salad and serve on a big plate. garnish with parmesan
