I love rice! A creamy rice porridge, a perfect sushi rice, a fluffy jasmine rice that soaks up the creamy curry sauce like a slice of baguette. Rice, rice, rice! I am picky about how it is prepared and can therefore proudly say that this recipe for rice is something heavenly! With its sweetness, it goes very well with spicy and Asian dishes. Ingredients:
300g sticky rice or jasmine rice
250ml coconut cream
250 ml water
¼ tsp salt
1 mango, peeled and diced
2 spring onions, cut into rings
1 tbsp toasted sesame seeds
Method:
Rinse the rice thoroughly in cold water until the liquid is clear.
Fry the rice in neutral oil until glossy, without taking color.
Add water and coconut milk. Bring to a boil and let swell over low heat until the rice is dry and fluffy.
Gently stir in spring onion and mango. Add 2 tablespoons of butter.
Top with toasted sesame seeds and serve immediately.
