Sweet and Sour Pomegranate Vinaigrette

This is absolutely lovely. It got a fresh sweetness mixed with a light sour flavour into it. the color is beautiful and I love to dress up either a winter salad with brussels sprouts, orange, feta cheese and walnuts or just sprinkle over a spinach salad with chicken filets as the protein.




Ingredients:
  • 1 - 2 pomegranates, separate seeds and juice

  • 1 dl extra virgin olive oil

  • 1 tbsp dijon mustard

  • 1 tsp honey

  • 1 tsp red wine vinegar

Method:
  1. Cut the pomegranates in to half and pure the juice and seeds into a bowl. Use a strainer to separate the seed from the juice.

  2. Whisk together juice, mustard, honey and vinegar

  3. Slowly whisk in 1 tbsp at a time of the oil until fully combined and an emulsion forms.

  4. Dress the salad and top with seeds.
